Available from June 6 to 27, 2026, the limited-time offering celebrates premium lamb through contemporary Filipino-inspired flavors masterfully crafted by Chef Juanito Abangan and Chef Jan Jacob.

At the heart of the experience are two signature creations that reinterpret familiar local flavors through refined culinary artistry.

The Tocino Spiced Leg of Lamb Kare-Kare features slow pot-roasted leg of lamb infused with tocino spices,served with burnt eggplant, roasted sweet potato, charred corn, crispy kadaifi, and finished with a rich peanut velouté. Comforting yet sophisticated, the dish delivers layers of sweetness, smokiness, and depth while elevating the essence of the beloved Filipino classic.

Meanwhile, the Leg of Lamb Dinakdakan Samosa offers a vibrant contrast in both texture and flavor. Golden, crisp samosa pastry is filled with charcoal-grilled leg of lamb, ginger, chili, and red onion, accompanied by calamansi aioli, mango pico chutney, and fermented garlic yogurt for a balanced interplay of smoky, tangy, and savory notes.

At El Viento and the Lobby Lounge, guests may enjoy The Lamb Affair Duet, a composed sampler experience designed for sharing and relaxed indulgence.
